Wild Garlic Tzatziki & Pita Bread

Ingredients 

Wild Garlic Tzatziki 

500g Greek yoghurt (plain)

1 cucumber 

35g wild garlic leaves

Leaves from 5 sprigs of mint

5 tbsp olive oil

½ fresh lemon juice 

Salt & pepper 


Home-Made Pita Breads 

150gr Greek Yoghurt 

150gr flour 

1.5 tsp baking powder 


Method

Wild Garlic Tzatziki 

Peel the cucumber, halve lengthwise, remove the seeds and grate the flesh. 

Toss with a pinch of salt, place in a muslin cloth and after 15/20 minutes, drain to remove the water. 

Wash the wild garlic leaves and discard any tougher stems. Roughly chop the wild garlic and mint leaves. Use a mortar and pestle to ground down the leaves into a paste, using a small amount of coarse salt. Add olive oil and mix well. 

In a serving bowl, mix the yoghurt, the cucumber and lemon juice, add the mint and wild garlic oil. 

Adjust the seasoning. Chill for a minimum of one hour before serving. 

Home-Made Pita Breads 

Mix the ingredients together and knead the dough until smooth. 

Wrap in cling film and let it rest for 20 minutes.  

Divide the dough into 4/6 small pieces, shape into balls. 

Using a floured rolling pin, roll each ball into a flat circle. 

Heat olive oil in a frying pan over medium heat and cook on both sides. Each piece should puff.

Serve warm!
