Sweet Potato Wedges

Ingredients 

Potato wedges 

1 sweet potato

Rosemary or thyme or oregano

Olive oil

Salt & pepper


Yoghurt Sauce 

100 g Greek yoghurt 

Juice of ¼ lemon 

1 tsp extra-virgin olive oil

1 tsp chopped parsley 

Salt & pepper 

¼ chopped garlic clove

Method 

Preheat the oven to 200C. 

Wash the sweet potato with a brush. Slice into wedges. 

prepare a small bowl with olive oil, salt, pepper and herbs. 

Toss the wedges in the mixture. 

Bake for 30 minutes until cooked. 


Once the sweet potato wedges are baking, prepare the sauce : thinly chop ¼ of a garlic clove (or more if you like garlic!) and parsley. Mix with yoghurt, lemon juice, olive oil and season with salt and pepper. Place in the fridge before serving it with the sweet potato.
