SWEET POTATO & POMEGRANATE BOWL

1 sweet potatoes
100 gr baby spinach
1/4 pomegranate
100gr feta
1/4 red onion
1 tsp fresh mint
Salt and pepper
2 tbsp olive oil for the dressing
2 tbsp olive oil for cooking

    4 tbsp olive oil for cooking

       

      Method

      Preheat your oven to 220°C.

      Peel and wash the sweet potato and cut into medium cubes. Coat the cubes with olive oil, salt and pepper, bake for 15 minutes, flip over and bake for another 10 minutes.

      Allow to cool.

      Thinly slice the red onion.

      Scoop the pomegranate seeds.

      Crumble the feta.

      Chop the mint.

      Place all the ingredients in a salad bowl, season with salt and pepper, toss with olive oil, it's ready!
