150gr chickpea flour

380gr water

4 tbsp extra-virgin olive oil

Salt & freshly ground pepper



2 ripe avocados

1 small shallot, chopped

½ lime juice

1 pinch of chilli flakes

Salt & pepper



Coriander / flat parsley



Prepare the guacamole: in a medium bowl, mash all the ingredients. Season to taste – you might add more salt and/or chilli flakes.

Now, prepare the Socca: preheat the oven to the highest temperature for 10 minutes.

Pour the flour and salt in a mixing bowl. Slowly add the water and whisk gently. Add 1 tbsp of olive oil and whisk until smooth.

Pour in an oven-pan 3 tbsp of olive oil. Bake for 5 minutes.

Remove the oven-pan from the oven and pour in the batter. Spread uniformly. Place in the oven (grill mode) for 10 minutes until golden.

Once cooked, cut the socca into small squares and add a tsp of guacamole.

You can add coriander or flat parsley!


Eat when the socca is warm/hot!
