1 Free-Range Chicken

Olive oil

Preheat the oven to 200C.

Rub the skin of the chicken with olive oil and season with salt and pepper. Put a few sprigs of rosemary into the cavity.

Put the chicken in a roasting tray and place it in the oven. Allow 45 minutes of cooking per kg + 20 minutes. If the chicken weighs 1.5 kg, the cooking time will be 1 hour 30.

During the cooking, use a spoon to scoop up some of the fat and drizzle it over the chicken.

Baste 3 times.

To be sure the chicken is cooked enough, pierce the thickest part of the thigh with a skewer and let the juices run out, they have to be clear, otherwise, put the chicken back to the oven for 15 more minutes.


Little tip!

You can put a halved lemon and a few sprigs of herbs into the cavity of the chicken to bring some flavour!
