RED MEAT RADISH PICKLES

Ingredients

1 red meat radish 

60 gr caster sugar 

120 gr apple cider vinegar 

180 gr water 

1 tsp salt

Herbs and/or spices  (optional)

 

Method

Peel the red meat radish and trim both ends. Slice into thin rounds (I cut each round into 4 pieces). 

Place into the jar, you can add herbs (bay leaves, chilli, dill, peppercorn). 

Bring vinegar, vinegar, sugar and salt into a saucepan to a boil and heat until the salt and sugar are dissolved. Pour the mixture over the radish pieces until completely submerged. 

Allow it to cool and place in the fridge for up to a week !
