For 4 people


125 gr cooked quinoa

50 gr flour or corn flour 

2 eggs 

¼ onion 

30 gr grated parmesan 

1 garlic clove

Any vegetable you want : carrot, pepper, chestnut mushroom, spinach, tomatoes… 

Fresh herbs : parsley, coriander … 

Salt and pepper

Vegetable oil


Wash, peel each vegetable into small cubes (brunoise). 

In a bowl, combine the quinoa, the flour, the parmesan and the eggs, mix well. Add the cut vegetables and mix. 

Heat the vegetable oil in a large frying-pan over medium heat. 

Form the mixture into patties. 

Place the patties on the hot pan and cook 5 to 8 minutes on each side, until cooked and golden. 

Serve with a salad.
