Ingredients
- 270 gr Monk’s Beard
- 300/350 g Spaghettis
- 2 garlic cloves
- Chilli flakes
- Olive Oil
- Lemon Juice
- Parmesan
- Salt & Pepper
Method
Put a large saucepan of water to boil, remember to put 1L of water for 100g of pasta with a big pinch of salt.
Cut off the roots of the Monk’s beards, wash and drain.
Peel and mince the garlic cloves. Heat 2 tablespoons of olive oil in a frying pan over medium heat and cook the garlic for a few minutes. Add 1 teaspoon of chilli flakes and the monk’s beards, with 125 mL of water. Season with salt and pepper. Cook for 8 to 10 minutes.
At the same time, cook your spaghetti according to the cooking time on the pack reducing the timing by one minute. (If the pack says 9 minutes, cook them 8 minutes).
At the end of the cooking time, add a ladle of pasta cooking water to the monk’s beard and drain the pasta. Add the pasta to the monk’s beard, add a tablespoon of olive oil and sprinkle with lemon juice.
Serve with fresh parmesan !
