MINI CRUSTLESS QUICHES

Perfect as a canapés !

For 8 mini quiches


Ingredients 

1 bell pepper

125 gr chestnut mushrooms 

6 cherry tomatoes 

1/2 onion

2 eggs

4 tablespoons flour

1 tablespoon Greek yoghurt

Salt & pepper


Method

Preheat the oven to 200 degrees

Wash the tomatoes and the bell pepper. 

Peel the mushrooms. 

Cut the vegetables into small cubes.

In a bowl, whisk the eggs, yoghurt and flour, add the veggies, salt and pepper and pour the preparation into a muffin pan and bake for 20 minutes !
