Ingredients
Arepa
1 glass of pre-cooked maize meal (such as P.A.N brand – easy to find on amazon)
1.25 glass of hot water
½ tsp salt
Topping
½ tin of black beans
50 gr crumbled feta
Flat parsley or coriander
Guacamole
2 ripe avocados
1 small shallot, chopped
½ lime juice
1 pinch of chilli flakes
Salt & pepper
Chipotle sauce
1 or 2 tsp chipotle in adobo sauce (easy to find on amazon)
1 garlic clove, unpeeled
2 tbsp Greek yoghurt
½ lime juice
Salt and pepper
Method
Prepare the guacamole: in a medium bowl, mash all the ingredients. Season to taste – you might add more salt and/or chilli flakes. Place in the fridge.
Prepare the chipotle sauce : in a food processor, mix all the ingredients together, adjust the taste : if too hot, add more yoghurt, if not enough, add more chipotle. Not sour enough? Add lime juice! Place in the fridge.
Prepare the arepa batter: in a mixing bowl pour the maize meal, add the hot water and the salt. Mix the ingredients with your hands for 2 minutes.
Flatten the dough to a thickness of 0.5cm.
Heat vegetable oil in a frying pan.
Use a shot glass as a mould to cut out pastry circles.
Cook in the frying pan ion both sides until golden.
Set aside until all the circles are cooked.
Then, just prepare all the ingredients:
- Cooked arepas
- Guacamole
- Chipotle sauce
- Black beans (reheated)
- Feta (crumbled)
- Parsley or coriander (chopped)
And prepare the arepas: spread guacamole on the arepas, add 2 or 3 black beans, feta, chipotle sauce and sprinkle with parsley or coriander.
