MIMOSA EGGS - 2 WAYS

For 6 mimosa eggs 


Ingredients  

6 hard-boiled eggs 

2 tbsp mayonnaise 

1 tbsp greek yoghurt 

25 gr fresh goat cheese 

1 teaspoon chopped parsley

Salt and pepper

Toppings : shredded lettuce, breakfast radishes, asparagus, cherry tomatoes… 


Preparation 

15 minutes 


Cooking time 

35 minutes 


Method 

Peel the hard-boiled eggs and halve. 

Remove the yolk and mix with the mayonnaise, add the parsley, season with salt and pepper. 

Stuff 3 eggs with the egg mixture. 

Mix the greek yoghurt with the goat cheese in a small bowl. Season with salt and pepper. 

Stuff 3 eggs with the cheese mixture. 

You can add the toppings you want : cooked asparagus, shredded lettuce, slices of breakfast radishes…
