Cook maitake, shiitake and chestnut mushrooms, a potato and a few small carrots. Once cooked, mix together with vegetable broth.
Bring 500 ml of water to a boil in a saucepan with 1 garlic clove, 1 pinch of salt, a few sprigs of fresh thyme and 1 or 2 dried bay leaves. Add the mushrooms and cook for about 10 minutes. Remove from the heat and add 175 ml of white wine vinegar. Add to your jars, allow to cool and keep in the fridge.
