This recipe explains how to make a strawberry puree, you can control the amount of sugar and replace it with raw honey, coconut sugar, date syrup for a healthier version !
You can also add the strawberry puree to your breakfast bowl, yoghurts, cakes and desserts !
Keep it in the fridge up to 2 days.
This recipe can be made with or without alcohol so everyone is happy !
I haven’t put any quantity of soda water : it’s up to you, if you want something light and fresh, add 2 or 3 splashes, if you want something sweeter, only 1!
For 2 people
Home-made strawberry puree
10 fresh strawberries
1 tbsp sugar syrup / raw honey / date syrup
1 tbsp lemon juice
1 tsp lemon zests
5 cl gin (optional / for an alcoholic version)
4 fresh strawberries, cut in 4
2 tsp sugar syrup / raw honey / date syrup
2 tsp lemon juice
4 basil leaves
Prepare the strawberry puree. Remove the stems and cut the strawberries. Blend the strawberries with lemon and zests until the texture is smooth and nice.
Add ice cubes in the glasses, pour in the gin (2.5 cl per glass), add 1 tsp sugar syrup, 1 tsp lemon juice. Give it a good stir and top with soda water, garnish with cut strawberries & basil!
