3 bananas

2 eggs

75 gr flour

75 gr cornflour 

50 gr maple syrup

30 gr vegetable oil

1 tbsp Greek yoghurt

A handful of chopped nuts

1 tsp cinnamon

1/2 tsp ground ginger

1 tsp baking powder

A pinch of salt


Preheat the oven to 180C.

Mash 2 bananas, crack the eggs and mix with a fork. Add the rest of the ingredients. Mix well. Grease a loaf tin, pour the cake mixture into the thin. 

Cut the last banana in 2 lengthways, add the 2 halves to the top of the mixture, sprinkle with brown sugar.

Bake for 45 minutes!

Leave it to cool before removing from the tin!
