Ginger Biscuit

For 20 to 25 biscuits

100g butter

75g Demerara sugar 

1 cm piece fresh ginger 

100g golden syrup

250g flour

1 tsp ground ginger

1 tsp cinnamon 

1 tsp bicarbonate of soda

1 tsp baking powder 

1 egg yolk

1 pinch of salt 



Preheat the oven to 190C. 

In a saucepan, melt the butter, sugar, golden syrup and freshly grated ginger over medium heat. 

In a mixing bowl, mix flour, ground ginger and cinnamon, 1 pinch of salt, the bicarbonate of soda, the baking powder and the salt, add the mixture and knead to form a dough. 

Prepare a baking tray lined with baking paper. 

Roll the dough into small balls and put on the baking tray. Bake 10 minutes. Leaves to cool and enjoy!
