Ingredients
4 flavourful tomatoes : Marmande, Pineapple, Cœur de Boeuf, Noire de Crimee…
½ red onion / 1 or 2 shallots / 2 or 3 Spring onions …
1 Mozzarella di Bufala
1 handful of basil
60 mL extra virgin olive oil
Balsamic vinegar (optional)
Sea salt and pepper
Pine nuts (optional)
Sesame seeds (optional)
Preparation

Method
Wash and slice the tomatoes. Cut the mozzarella.
Layer the tomatoes, the mozzarella and the onion or shallots.
Chop the basil and sprinkle on the tomatoes and mozzarella.
Drizzle the olive oil over the salad, if you want some balsamic vinegar as well. Season with salt and pepper and wait 15/20 minutes before serving.
