Ingredients:

800 g fine beans
1 shallot
2 garlic cloves
Squeeze lemon
20 g butter

 

Method:

1) Trim the ends of the fine beans.
2) Bring a pan of salted water to the boil. Add the fine beans and boil for 3 to 5 minutes (depending on the thickness of the bean). You want them to be soft but with a little crunch.
3) Drain in a colander.
4) Peel and slice the shallots and garlic. In the pan over medium heat, add the butter, the garlic and the shallots. Cook for a few minutes and add the fine beans, lemon juice, salt and pepper and cook for 2 more minutes.
5) Chop parsley and sprinkle before serving.

 

Little tip #1!
You can save time and cut the ends of the fine beans with scissors!
This is also a great task to get your kids involved!

 

Little tip #2!
Once your fine beans are cooked, shock them in ice water to stop the cooking process and keep the vibrant green colour!
