For 6 people
180 gr dark cooking chocolate
180 gr unsalted butter
120 gr sugar (you can put up to 160gr if you want it to be sweet)
100 gr flour
2 tsp baking powder
1 pinch of salt
Preheat the oven to 180C.
Using a double boiler, melt butter and dark chocolate together.
Separate the egg yolks from the white.
In a bowl whip the egg yolks and sugar until the mixture lightens in color.
Sprinkle in the flour and the baking powder and a pinch of salt.
Add the chocolate mixture and mix well.
In a separate bowl, using an electric mixer, beat the whites to form soft peaks.
Add the egg whites to the cake mixture and mix delicately taking care of not breaking the egg whites.
Pour the mixture into a buttered mould (diameter 20cm) and bake for 35 minutes.
Leave to cool before unmolding.
