Blackberry Oatmeal Parfait


For Sauteed Blackberries:

1/2 cup fresh blackberries
1 tbsp fresh lemon juice
1 tbsp maple syrup
1 tbsp water

For the Oats:

1 cup oats (optional - gluten free)
1 cup water
1 tbsp maple syrup
1 tbsp chia seeds
1/4 cup milk (optional - almond or oat milk)
1 tsp vanilla extract

Other Toppings:

1/2 cup coconut yoghurt
1/4 cup fresh blackberries
Edible Flowers (optional - for decoration)



1. In a medium saucepan over low heat, combine the 1/2 cup of blackberries, lemon juice, and maple syrup. Mash the blackberries slightly with a fork to break them down. Cook for around 10-15 minutes, stirring occasionally until berries soften and liquid evaporates, leaving just a bit of juice behind. Allow to cool to room temperature before assembling.

2. In a saucepan, over medium heat, cook the oats in the hot water until soft. Remove from the heat and add the chia seeds, milk, maple syrup and vanilla extract.

3. Place blackberry compote in the bottom of the jar, followed by the oats, yoghurt, then berries.
